Yield: 1 1/2 cups, 2 servings
This easy ice cream tastes so rich and creamy, you won’t believe it’s dairy-free. It makes purchasing an ice-cream maker worthwhile!
Ingredients
- 1 1/2 cups Almond Cream or Cashew Cream
- 2 tablespoons maple syrup or agave nectar
- 1/2 teaspoon vanilla extract
- Dash salt
Equipment
- measuring cups
- measuring spoons
- medium bowl
- whisk
- ice-cream maker
Put all the ingredients in a medium bowl and whisk to combine. Freeze in an ice-cream maker according to the manufacturer’s directions. Serve immediately.

What if one doesn’t own an ice cream maker?
I’ve made ice cream in the vita mix with frozen fruit.
i.e. frozen bananas, frozen mango(with a couple of dates added to sweeten). Does an ice cream maker work better?
What do you think of the agave kerfuffle? Even organic is being given a thumbs down.

An ice cream maker works best for nut-milk based ice creams, but for frozen fruit ones, a Vitamix or food processor is just fine!
I don’t think agave is great for you, but I don’t think it’s any worse than other concentrated sweeteners such as honey and maple syrup. I try to minimize use of any concentrated sweeteners, but I don’t think agave’s the devil either
)
