Taco Salad

Yield: 1 serving

The salsa and guacamole combine richly in this dressing so that no oil is needed.

Ingredients:

  •     3 cups chopped romaine lettuce
  •     3 tablespoons Salsa, storebought or homemade
  •     1/4 cup Guacamole, storebought or homemade
  •     1/4 cup seeded, diced cucumbers (optional)
  •     1/4 cup fresh corn kernels (optional; see note)


Equipment

  •     cutting board
  •     chef’s knife, 8-inch
  •     spoon
  •     measuring cups
  •     measuring spoons
  •     medium mixing bowl
  •     rubber spatula


Place all the ingredients in a medium mixing bowl and toss to combine

Note: To remove the kernels from an ear of corn, stand the ear upright on a cutting board and slice the kernels off all sides with a sharp knife.

Hi Jenny:

I just recently learned that you moved to California.  We Chicagoans miss you.  However, I know you’re doing well from what I’ve heard from other grads.

I’m currently enrolled at The Integrative Institue in New York City.  Clayton closed last year so I couldn’t finish my Master’s but the Universe chose a better route for me through me.

I do have my own business Joyful Livng for Life, a nutritional/chef consulting business which I’m in the process of updating.

Thanks to you and Livning Light for your wonderful mentoring, support and encouragement. I hope to eventually go back for advanced chef training soon.

Hi Jenny,
It is good to see your newsletter.  I didn’t realize you had moved back to CA.  It looks like you are adding in some classes.  Thank you for all you have taught me.  I think of you often…especially as I go through and teach all the packets.  I am not teaching right now because my husband and I have been called as missionaries in our church, serving in the addiction recovery program.  It is amazing and I am learning alot.  I can see how important food is in even helping overcome addictions of many kinds…some of the addiction is to food.  We help with an eating disorder group, substance abuse, sexual addictions, family support groups, and we even do a group at the prison facility here.  We are learning so much that I think will help when I get back to teaching food classes again.

There is salsa in the recipe, which is what the picture is of. If you click on “salsa”, it will take you to that recipe (or you can use storebought if you are short on time).
