You need only three ingredients to make this luscious, bright green mousse.
- 3⁄4 cup mashed avocados (1 1⁄2 avocados)
- 1⁄4 cup agave nectar
- 2 tablespoons fresh lime juice
- Sliced fresh kiwifruit and/or berries, for garnish (optional)

Place the avocados, agave, and lime juice in a food processor fitted with the S blade and process until smooth. Stop occasionally to scrape down the sides of the bowl with a rubber spatula. Garnish with kiwifruit slices and/or berries, if desired. Serve immediately. Stored in a sealed container, Key Lime Sherbet will keep for one month in the freezer.
For a Double-Batch Key Lime Mousse: Increase the amounts to 1 1⁄2 cups mashed avocados (3 avocados), 1⁄2 cup agave nectar, and 1⁄4 cup fresh lime juice. Yield: 2 cups, 4 servings.
For Lemon Mousse: Replace the lime juice with an equal amount of fresh lemon juice.
For Key Lime Sherbet: Freeze the Key Lime Mousse for at least 4 hours. Allow to thaw for 15 minutes before serving.
