Yield: 2 cups, 1 serving

Carrot juice blends are excellent sources of beta-carotene.

  • 1 large carrot
  • 4 stalks celery
  • 1 beet, cut into chunks
  • 2 apples, cut into chunks (optional)
  • 1 lime, peeled (optional)

  • cutting board
  • chef’s knife, 8-inch
  • juicer

Juice all the ingredients and serve immediately.

For Carrot-Celery-Cucumber Juice: Omit the optional apples and lime. Use 2 carrots and replace the beet with 1 cucumber.
