Avocadoes, rather than oil, make this dressing creamy yet light.
Yield: 1 cup, 4 servings
Ingredients
- 1 avocado, mashed (3/4 cup)
- 1/2 cup water
- 1 tablespoon fresh lime juice
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon crushed garlic (1⁄2 clove)
- 1 tablespoon minced fresh dill weed, basil, or mint
Equipment

- chef’s knife, 8-inch

- small mixing bowl
- measuring cups
- measuring spoons
- citrus juicer or reamer
- blender
- rubber spatula
Place the avocado, water, lime juice, salt, and dill in a blender and process until smooth and creamy. Stored in a cruet or glass jar in the refrigerator, Avocado Lime Dressing will keep for two days.
