Avocado Lime Dressing

Avocadoes, rather than oil, make this dressing creamy yet light.

Yield: 1 cup, 4 servings

Ingredients

  • 1 avocado, mashed (3/4 cup)
  • 1/2 cup water
  • 1 tablespoon fresh lime juice
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon crushed garlic (1⁄2 clove)
  • 1 tablespoon minced fresh dill weed, basil, or mint

Equipment

  • cutting board
  • chef’s knife, 8-inch
  • fork
  • small mixing bowl
  • measuring cups
  • measuring spoons
  • citrus juicer or reamer
  • blender
  • rubber spatula

Place the avocado, water, lime juice, salt, and dill in a blender and process until smooth and creamy. Stored in a cruet or glass jar in the refrigerator, Avocado Lime Dressing will keep for two days.
