Garden Vegetable Green Smoothie

Yield: 4 cups, 2 servings
Not in the mood for a sweet-tasting breakfast? This vegetable-rich drink is savory, and it works well for lunch or dinner too.
Ingredients
- 1 cup water
- 1/2 zucchini, unpeeled and chopped
- 1/2 cucumber, unpeeled and chopped
- 1 tomato, chopped
- 2 stalks celery, chopped
- 1/2 apple, unpeeled and chopped
- 2 cups chopped Swiss chard, bok choy, or spinach, packed
- 1/4 lemon, peeled
Equipment
- measuring cups
- cutting board
- chef’s knife, 8-inch
- measuring spoons
- blender
- rubber spatula
Put all the ingredients in a blender and process on high speed until smooth. Stored in a sealed jar in the refrigerator, Garden Vegetable Green Smoothie will keep for 12 hours.

More savory than sweet, this smoothie is filled with nutrient-rich greens. It’s one of my favorites for breakfast or a snack.
Ingredients
- 2/3 cup water
- 1/4 cucumber, unpeeled and chopped
- 1/2 stalk celery, chopped
- 1/2 apple, unpeeled and chopped
- 1/2 cup chopped kale, packed
- 1/2 cup chopped romaine lettuce
- 1/4 cup chopped fresh parsley, packed
- 1/8 lemon, peeled
Equipment
- measuring cups
- cutting board
- chef’s knife, 8-inch
- blender
- rubber spatula
Put all the ingredients in a blender and process on high speed until smooth. Stored in a sealed jar in the refrigerator, Nonsweet Green Smoothie will keep for 12 hours.
Spinach + chocolate = healthy yum!! In this kid-friendly (and kid-at-heart-friendly) smoothie, chocolate conceals the color and taste of spinach. And if you love this recipe I've linked to a few more below.

- 2 bananas
- 4 pitted medjool dates, soaked in water for 10 minutes and drained
- 3 1/2 tablespoons unsweetened cocoa powder
- 3 cups chopped spinach or Swiss chard, packed

- small colander or fine-mesh strainer
- measuring spoons

Put all the ingredients in a blender and process on high speed until smooth. Serve immediately.

Pineapple Green Smoothie

Pineapple allows you to increase the amount of bitter greens (which are the most nutritious ones) in this smoothie, without sacrificing sweet flavor.
Ingredients
- 2/3 cup water
- 2 cups chopped pineapple
- 1 1/2 cups chopped kale, collard greens, or dandelion greens, packed
Equipment
- cutting board

- measuring cups
- blender
- rubber spatula
Put all the ingredients in a blender and process on high speed until smooth. Serve immediately.
Frosty Banana-Apple Green Smoothie

Yield: 2 1/2 cups, 2 servings
This smoothie is so sweet, you’ll hardly believe it’s loaded with dark leafy greens. Think of it as a green milkshake.
Ingredients
- 2 frozen bananas, thawed for 5 minutes
- 3/4 cup water
- 1 apple, unpeeled and chopped
- 8 leaves kale, chopped
Equipment
- cutting board
- chef’s knife, 8-inch
- measuring cups
- blender
- rubber spatula
Break the bananas into 2 or 3 pieces. Put all the ingredients in a blender and process on high speed until smooth. Serve immediately.
