Cocoa powder is made from roasted cacao beans that have been processed to extract the butter, then dried and ground. Roasted cocoa powder has a deeper flavor than raw cacao powder, so sometimes I like to use it in raw desserts. Choose an organic brand. (Dutch-processed cocoa powders, such as Green and Black’s, are my favorite brands because they have the deepest chocolate flavor.)
