Why Shouldn’t You Wash Mushrooms?

Did you know that mushrooms are more flavorful if you don't wash them?

This is because mushrooms are like a sponge. If you put them under running water, they'll absorb all that water and get soggy. They also will be so filled with water that they won't be able to absorb any delicious flavors from a marinade or sauce.

But since we aren't going to scrub 'em clean, do make sure you start off with organic mushrooms. Creminis are my favorite.

So here's how I clean mushrooms:

Just wipe them off with a clean damp dishcloth or papertowel. That's it! It gets them plenty clean.

Then I'm ready to marinate them, usually with a little tamari (gluten-free soy sauce). This gives them a deep, savory, cooked flavor. Just slice them thin and toss them with the tamari (about 1/2 teaspoon tamari for every cup of sliced mushrooms, or to taste).

One of my favorite ways to use marinated mushrooms is in the collard green roll-up. They add a meaty taste to it.
