Watch, Learn, and Make Mediterranean Kale Salad

Some folks like to read a book to get their information, while others prefer to watch a video.  Personally, I like both approaches, and that’s one reason that I post recipes on my site and then demonstrate them in videos on my YouTube channel.

Topping the charts on my Lunch and Dinner playlist is Mediterranean Kale.  It’s one of many recipes that I’ve created that focuses on the flavors of international cuisine...and a personal favorite, too.  You’ll find the recipe, along with two unique variations, in Raw Food Made Easy for 1 or 2 People

My raw food Mediterranean Kale salad includes bright red bell pepper, dark olives, and a sprinkling of pine nuts.  The colors are amazing together and so are the flavors.  

I often serve Mediterranean Kale as a side-dish at dinner, but it also makes a marvelous and very filling salad at lunchtime.  Just be sure you put it in a tightly sealed container so that the dressing – made of lemon juice and olive oil – doesn't escape.  

Are you worried that kale leaves are too chewy to be enjoyable?  Fear not.  This tough leafy green has a tender side:  when you cut kale into thin strips and marinate it in a dressing, it becomes soft and juicy.

I’m glad you like the salad! I still call what I do “cooking”, since I think that term applies to more than just adding heat!
