Stuffed mushrooms are a perfect finger food for holiday parties and look beautiful on a brunch buffet. Best of all, as you’ll see in my demonstration video, the techniques in my recipe are easy...and the results will blow you away!
When I was in college, stuffed mushrooms were very much in fashion for entertaining. I enjoyed the taste, but the butter, meat, cheese and bread crumbs in traditional recipes worried me. So I developed a raw version that I could serve to my guests (and myself) with a clear conscience.

The Stuff(ing) Dreams Are Made of
The star of my stuffed mushroom appetizer is the filling, and it couldn’t be easier to prepare. As you’ll see, there are two main ingredients:
- Sunflower Seeds
- Sundried tomatoes
You may be wondering how two such dry, crunchy-chewy ingredients could be combined to create a smooth, luxurious stuffing for Portobello, button, or cremini mushrooms. Good question! During the demo you’ll discover that the secret is soaking the seeds and the sun-dried tomatoes before processing.
Then, it’s a simple matter of adding a bouquet of spices and some flavorful liquid (including lemon juice). I’ll show you how to let your food processor, equipped with the S-blade, do the work.
Sunflower seeds are mild. It’s the sun-dried tomatoes in the pâté stuffing that provides intense flavor and color to this appetizing dish. Their deep vibrant red is especially beautiful on a candlelit table.
The video shows you how I use some of my favorite flavor boosters like lemon, water, garlic, and other seasonings which you add before processing.
I also add onion and parsley to the mix for added flavor, and demonstrate how to "pulse" your processor to maintain the right consistency.
Put out a platter of these little gems at 11:59pm on New Year’s Eve and they might just be gone before the clock strikes 2014!
