When the sun comes up on 2012, many people will begin making good on their New Year’s resolutions to lose weight and/or eat healthier. Why not host a raw food brunch to celebrate all those good intentions?
What to serve? I’m glad you asked!
A bowl of mixed fruits is always delicious for brunch, but my Tropical Fruit Salad with Sweet Orange Cream Sauce is doubly delicious. The addition of a heavenly sauce made with raw cashews, agave nectar, and fresh orange juice adds another layer of flavor that takes this simple dish to a whole new level.
Cereal is America’s most popular breakfast food, so you don’t want to leave it off your brunch table. Unfortunately, most boxed versions are made from refined flour and sugar and have little nutritional value. But raw Granola is made with healthy nuts and seeds. It packs in far more nutrition than its commercial counterparts, as well as a fresh flavor ‘wallop’ that processed food can’t duplicate.
You can’t have cereal without milk, but some people have problems digesting dairy products, others are watching their cholesterol, and still others are watching their waistlines. A nut-based milk, such as Almond Milk, delivers all the creamy goodness of regular milk, but it’s a lot healthier.
I hope these recipes inspire you to create your own New Year’s Day raw food brunch menu. And if they do, I hope you’ll share your ideas in the comments section at the end of this post.
See you next year!
