Terrilynn Epperson and I have gotten to know one another through our work at the Living Light Culinary Institute. After graduating from Living Light as a Gourmet Raw Food Chef, Terilynn fell in love with Fort Bragg and the Mendocino coast, and realized that she wanted to live and work there. She became an executive assistant for Living Light and has grown into one of its most cherished and effective staffers.
Beyond her work at Living Light, Terilynn maintains one of the most visually appealing sites on the Internet devoted to raw food: The Daily Raw Café. Talk about whetting your appetite for raw food cuisine! The photos on Terilynn’s site are so mouthwatering that you may find yourself licking your computer screen!
In a recent post on her site, Terilynn reviewed Raw Food Made Easy for 1 or 2 People Revised. It made me laugh when she referred to her “tattered copy of the original.” You can read the entire review here.
Before I sign off, I want to acknowledge that Halloween is almost here. Don’t be scared! Be prepared for the onslaught of sweets-hunting trick-or-treaters in your neighborhood – and make yourself a hero with their parents – with naturally sweetened raw cookies instead of sugar-y store-bought treats.
I recommend my Lemon Cranberry Pistachio Cookies. They’re made with--suprise--lemon, dried cranberries, and pistachios (and some almonds and dates).
The trick for turning them into a Halloween treat is to keep them as balls and not flatten them into cookie shapes. You can wrap the balls, rolled in almond flour, in a small square of plastic wrap and tie them with orange and black ribbon.
