Quick & Easy Raw Food Latin Brunch

When you want “fast food,” do you immediately think of a burger, pizza, or taco chain with a drive-through?  A lot of people do.  I wish they knew that raw food is delicious, nutritious “good food fast,” and that’s so much better than plain old “fast food.”

In this post in my New to Raw blog series, I’m going to share a game plan that lets you put together a gorgeous raw food brunch in just thirty minutes.

Brunch days are often hectic because guests begin arriving early, but you’ll be cool and calm with three raw food recipes that you can have prepped in advance and ready to serve. 

3 Make-Ahead Raw Food Recipes

  • Gazpacho – You won’t miss the bread that is often used to thicken this Spanish classic. Blending the vegetables delivers authentic texture.  It can be kept in the refrigerator for up to 48 hours...if you can keep yourself from taste-testing it!
  • Latin American Cabbage – Go ahead and prepare this authentic Costa Rican cabbage slaw up to 48 hours before your brunch; the longer it marinates, the more delicious it tastes. 
  • Tropical Fruit Tart – This sweet and lavish dessert is perfect after a menu infused with Latin flavors.  Make it up to three days in advance to save time on brunch day.

Raw Food Brunch in the Blink of an Eye

My raw food recipes let you cruise into your 30-Minute Brunch Day with just one dish to prepare at the last minute:

  • Stuffed Bell Pepper with Guacamole – Wait until just before your guests arrive and then quickly assemble this dish.  It takes minutes to make guacamole and it should be served immediately so it doesn’t darken.

That’s it. You’re set. You’ve got four delicious raw food brunch courses – soup, salad, main course, and dessert – to serve your guests.  They’ll never know how easy it was to prepare or how nutritious each dish is, unless you tell them.  All they’ll know is how good it tastes!
