No-Bake Raw Food Summer Cookies

Summer is sweeping the country as I write this, with high heat and humidity in the Northeast, Southwest, and all points in between.  

When the weather is hot and sticky, no one wants to cook.  But if you still crave fresh, homemade cookies, my Almond Cookie Recipe provides an ideal solution.  

This raw dessert recipe lets you whip up a batch of goodies in quick time, without turning on the oven or stove.  Made with almonds, walnuts, dates, and a secret ‘flavor booster’ (almond extract), they are chewy and delicious.

Adding Some Raw Food Crunch to that Smooth Goodness
The key to making this particular raw food cookie taste extra-good is to avoid over-processing.  That allows the nuts to retain some of their texture and gives the cookie a nice crunchy element.  

When I want a little extra zip and zing, I add dried cranberries, raisins, or dried cherries for even more flavor.

Stored in a sealed container, Almond Cookies will keep for one month in the refrigerator or three months in the freezer.  So you can ‘bake’ once and enjoy cookies for weeks to come. Click here for the recipe.
