It’s Easy Being Green—with Blueberry Green Smoothies

Was Kermit the Frog talking about a healthy diet when he said ‘It’s not easy being green’?  Perhaps.  For many people, a major challenge in healthy eating is making dark leafy greens palatable and digestible.  You see, greens have tough cellulose fibers that need to be chewed very thoroughly. Unfortunately, chewing huge salads can be time-consuming and unpleasant for the beginner, and not always easy to digest. 

The answer:  a Green Smoothie.

With a Green Smoothie, your blender does the work.  It actually ‘chews’ the greens for you, breaking down cell walls, and releasing the nutrients. So when you enjoy a Green Smoothie – and you will enjoy them because they’re delicious -- you’re getting all the goodness of greens without anything superfluous—no sugar or dairy products (as is often the case in regular smoothies) and no salt or oil (as is often the case in salads).

Few children -- or adults either, for that matter -- get the USA recommended three cups of dark green leafy veggies each week.  So having a Blueberry Green Smoothie for breakfast or as a snack is a great way to get the greens into your kids.  It’s made with the fruits kids like for breakfast – oranges, bananas, and berries – but includes a cup of chopped spinach, kale, or Swiss chard, too.

That amps up the nutritional value considerably and gives your child a great start to his or her day.

We eat with our eyes, as well as our mouths, and kids are often extremely fussy about eating their greens.  So another reason the Blueberry Green Smoothie ‘goes down easy’ is that the blueberries keep keep it tinted purple, instead of green. 

A third kid-friendly aspect of the Blueberry Green Smoothie that makes life easy for Mom and Dad is that you can store it in a sealed jar in the ‘fridge for up to 24 hours.  That means that time-pressured parents can make up a batch in the morning and have an easy grab-and-go afterschool snack for waiting for youngsters in the afternoon.
