A Low-Salt Raw Food Diet Helps Keep Water Weight at Bay

In order to keep my weight steady and my health at its optimum level, I try to limit my salt intake.  Salt causes the human body to retain water and feel puffy.  It can also put some people at risk for heart disease and circulatory problems.

Salt is not an all or nothing ingredient.  In fact, a healthy diet can have some sodium.  The 2010 Dietary Guidelines for Americans from the Mayo Clinic recommend limiting sodium to less than 2,300 mg a day — or 1,500 mg if you're over 50, have high blood pressure, diabetes or chronic kidney disease.

Sodium is found naturally in foods and the pure, unadulterated flavors of fresh fruits and veggies make adding salt unnecessary. 

Fast foods and packaged foods contain a lot of sodium, as a flavor booster and a preservative.  Storebought salad dressings are also notorious culprits, with up to 200 grams of sodium in a single tablespoon.  But my raw Latin American Cabbage Recipe--an authentic Costa Rican dish--relies on healthy herbs, fruit juices, garlic, onions, and spices to give it a flavor boost.  Click here for this authentic Costa Rican recipe.

The original recipe in Raw Food Made Easy for 1 or 2 People calls for the addition for 1/8th teaspoon of salt, but you can omit that and get all the tongue-tantalizing taste you need from cilantro and other ingredients.
